Popeyes Favorite Dish Meatballs In Lemon Spinach Sauce

So on the last week in the Detox, I made the following recipe. It’s my mother’s (of course), but she makes it with ground beef, I used ground chicken breast because in the Detox we avoid eating red meat. This is one of my favorite recipes, it’s easy to prepare, it’s a healthy writer and with the amount of spinach it contains, Popeye himself would have been proud of.

Ingredients

  • For the meatballs
  • 1 lbs of ground chicken breast - You can also use ground beef or half-half.
  • 1 Large grated onion
  • 1 large grated zucchini
  • 1 bunch of parsley / cilantro
  • 1 Egg
  • 2 tablespoons of spelt flour (you may use bread crumbs instead)
  • 1/2 teaspoon of cumin
  • Salt and pepper to taste.
  • For the souce
  • 1 onion
  • 1 whole celery
  • A beautiful handful of spinach leaves (200-250 g)
  • 1 tablespoon of turmeric
  • 2 tablespoons olive oil
  • 2 garlic cloves
  • 2 lemons

Instructions

If you use a food processor, put all the meatball ingredients in a food processor and grind.

Put the mixture in the refrigerator for about half an hour.

If you do not have a food processor:

Grate the zucchini and the onion over a thin grater and strain water, by squeezing the mixture.

Chop the parsley.

Place all the ingredients of the chicken meat balls in a bowl and mix well and let the mixture rest in the refrigerator for about half an hour.

Meanwhile, prepare the sauce.

Cut the onion in half and slice into thin slices.

Peel the lemons and slice into slices that are not too thin (1/2 inch)

slice the celery and the garlic into thin slices.
