Charoset Recipe

Charoset is a sweet, dark-colored paste made of date and nuts eaten at the Passover Seder.
My grandmother,  used to make a hysterical amount of Charoset, that after the Seder everyone can take some home.
Every year my task was to put the peanuts in a cloth and remove the peels.
She had an old food processor, which was shaking all over when she used grind everything in  it. Although She was short, fat, and not very stable woman, she used to get on a stool and lean on the food processor, so that it would not dance his last dance while grinding.
I miss my grandmother. And this is her recipe.

Ingredients

3 cups of walnuts
3 cups of roasted and peeled peanuts
1 pack of date spread (450 g)
1 kilo of dates in a vacuum
1/3 cup brandy

Preparation

1. In a food processor, grind the walnuts and peanuts separately. The reason we grind separately is that we do not want to grind everything to a powder without texture and flavor. I like to grind the walnuts thinner than the peanuts. Put both in a large bowl
2. Place the vacuumed dates in a bowl with half a cup of boiling water and put in the microwave for a minute. Remove and mix. The goal is to soften them a bit
3. Add the dates (which are no longer) in a vacuum to the bowl with the nuts and peanuts
4. Add the brandy and date spread
5. Mix – and that’s it!

Remarks

– The amount is very big. You can cut the quantities in to half
– The brandy taste is not noticeable and its main purpose is to break the sweetness
