Corn Patties

Last Sunday, Dima and I woke up sick; Fever, chills, weakness, abdominal pain all over ourselves – you name it- we had it. It was horrible! And with a toddler running all over the place.
The Doctor sent us to do the COVID-19 test, which by the way – really unpleasant.
Until we get the answer we must stay home – meaning we can’t go grocery shopping.
What am I going to do regarding Noam’s lunch? Well I have a kitchen smart- which is like a street smart but just in the kitchen. I have the ability to improvise proper meal from almost nothing- and look what I got! Corn patties! How great is that??
I hope you will like it! Noam sure did

Ingredients

1 cup of Corn (canned\ frozen)
1  egg
3  heaping tablespoons of spelt flour (you may use  all-purpose flour if you prefer)
3/4  cup of cheese (mozzarella\cheddar\Swiss- whatever you like) finely grated
3  tablespoons of milk
Salt to taste

Instructions

1. Mix all ingredients except the corn, add a little more milk if needed. The texture of the mixture should be sticky but not too thick and not too liquid
2. Add the corn
3. Preheat a nonstick pan and spray a bit oil
4. Pour a small spoonful of the mixture on the pan
5. Fry on low heat for about 3-4 minutes on each side

Notes:

– You may add fresh herbs like parsley or cilantro thinly chopped
– You may add black pepper and garlic powder or any other spice you like- I didn’t add because I wasn’t sure if Noam would like it
– You SOULD add fry onion (small one, yellow or red, thinly chopped)- I wanted fast fast fast lunch so I didn’t add any but I bet it would taste – better with some onion.
