There was some strange pieces of radish- and I was disappointed, because I don’t like radish.
I hate changing dishes, it’s always uncomfortable for me. Like a kid, I removed all the radish to one side, but one piece found its way into my mouth and guessed what it tasted pretty good.
Mother had already flown back home to Israel and Thanksgiving was approaching. That was my first Thanksgiving. Every grocery store sold fresh cranberries. I have never seen fresh cranberries in Israel, and I bought a package – because if the dried ones are so good then the fresh ones must be much better. Well I was wrong.
I bought a pretty big bag and it’s a sin to throw food. I thought about what could be done with them that would fit our Detox diet.
After a few days we were back at the supermarket and the radishes were so beautiful there that even though I don’t like their taste I bought some. I decided that I would try to make the radish we ate in Solvang and add some cranberries.

Dee, my American mother, gave me a recipe for pickled beets, and I decided to try the same spices on the radish and the cranberries. I love pickels so what can go wrong?
The result was quite successful, and it’s nice to add it to salads, and even eat it as a snack.
Sweet Pickles: Radish & Cranberries

Ingredients

  • one medium red onion
  • 400 gr. of radishes
  • 200 gr. of fresh cranberries
  • 1 teaspoon of mustard seeds
  • 1 cinnamon stick
  • 1 cup of organic maple / agave
  • 11/2 cups of vinegar
  • 3/4 cups of water
  • 3-4 cloves

Instructions

Cut the radishes and the onion into thin slices, and place all the ingredients in a jar.

Close the jar tightly and turn it upside down a few times in order to mix all the ingredients.

After two weeks you have perfect sweet pickles.
