Balsamic Vinegar- Maple Syrup Dressing

One of the things I was most afraid of before I got pregnant was not losing what I have gained. Sounds shallow? For me, it us a real fear.
As a girl with genetics of a hippo and the head of a chubby kid, maintaining a normal weight and keeping fit is not an easy task. But somehow with all the jogging I had done, I managed to preserve a body I was pleased with.
To tell you the truth at first I was optimistic that despite the genetics I have been blessed with, it would be fine after pregnancy. For the first three months I hardly ate. I suffered a terrible nausea and ate mostly rice cakes.
You could not tell I was pregnant until I was in the sixth month, and even though I did not do sports because we were on the road for long time, my weight seemed to be fine.
Then the eighth month arrived and there was an extreme increase in my weight. “Oh, it’s just liquid” I was comforting myself “After the delivery everything will go away”.
So I’m two months after the birth and guys – it does not go away. I’m eating healthy, exercising and it does not go away.
I decided to do Detox again. Although the last time we did it, I didn’t lose a lot of weight (to be fair I did not have a lot to lose) but Dima, who gained a lot when we arrived to the United States, lost more than 22 pounds.
This time Dima does not want to join me, but agrees to eat dinner with me so it would not be hard for me when he opens beer and makes panini. So the next recipe is salad, with a “clean” dressing that turns it from a  dull vegetable salad  into a rich and tasty one that we eat every night.

Ingredients

  • For salad:
  • A handful of spinach / lettuce (one that will fill the bowl of salad)
  • A cup and half of cherry tomatoes- cut in halves
  • 1 carrot- grated
  • Half a small purple onion- sliced thinly
  • A quarter cup of walnuts
  • sauce:
  • Half a cup of balsamic vinegar
  • One-third cup of natural maple
  • 1 garlic clove crushed
  • Tablespoon olive oil

Place the spinach, the cherry tomatoes, the carrot, the red onion and walnuts in a bowl.

The amount of the sauce is for more than one salad. Therefore, I recommend preparing the sauce in a jar: put all the ingredients for the sauce in an empty jar and mix well. Put as much as you like in the salad and keep the rest in the fridge.
