Healthy Honey Cake

For Rosh Hashanah’s Eve I prepared the Zehava’s famous rice, traditional meatballs that my mom makes every Rosh Hashanah , the pomegranates soup, Hila’s Salad and I asked Anat what dessert to prepare, and she told me to make a honey cake – as befits Rosh Hashana.
Anat and her son did the Detox with us, and today they eat very healthy. I didn’t know what kind of honey cake to make. So I took my mother’s honey cake recipe and made it a little bit healthier.
This is the place to tell you guys that my father does not like honey, he claims to be allergic. We all know that he isn’t, because he eats this cake (and many more dishes he doesn’t know contains honey), this is also the place to find out if he reads my blog 😜

Anyway I really love honey!! And there is a good reason why on Rosh Hashana we eat honey and ask from G-d that the new year will be good and as sweet as honey. Most people consume honey only when they are sick, because honey is known for its antibacterial properties that kill germs, but I like to use it in a variety of marinades, sauces, dressings and when I have a craving for something sweet.
Beyond that, honey contains potassium, calcium and various vitamins from the vitamin B group, various minerals and of course sugar, but good sugar, so don’t hesitate to use it.

I love this cake because it is easy to make, without separating the eggs and without whipping the whites, without using a few bowls that need to be washed afterwards, everything in one bowl. I use a mixer, just because it is easier, but you can easily do it manually with a whisker. This is a recipe that is so easy to make that it is really fun to prepare it also for Shabbat and not necessarily for the holiday.
The next recipe is a “clean” recipe, meaning there is no sugar in it- if you want to use half of the amount of the honey with sugar you may.

Cooking Time: 50 minutes

Ingredients

  • 2 cups of spelt flour
  • 1 cup of almond flour
  • 3 eggs
  • 1 1/2 teaspoons of baking powder
  • 1 cups of raw real honey +1/2 cup for glazing
  • 3/4 cup of coconut oil
  • 1 tablespoon of cinnamon powder
  • 1 cup of cinnamon tea (or any other tea- but I like this one).

Instructions

Mix all the ingredients together, use just 1 1/2 cups of the honey amount, and divide the mixture into two English cake trays.

Bake for 40-50 minutes on 320 F°.

Mix the extra half cup of honey with half a cup of warm water and mix well.

When the cakes come out of the oven, pour r the glaze on them and wait for the cake to cool.

    Hi I would like to make this healthy honey cake but what do u mean by 1 cup of cinnamon tea??? Is that a cup of water with cinnamon tea????

      Hi Sandy,
      Yes. That’s what I ment. Take a cinnamon teabag flavore and soak it in a 1 cup of hot water.
      Remove the tea bag and use the liquid.

    By almond flour you mean thinly ground almonds or something else?
    What can I substitute almond flower with?

      Thank you for your comment.
      There is an Almond flour you can buy at the grocery store, but you definitely can ground some almonds by yourself.
      Spelt flour is very heavy. The purpose of the almond flour is light things up. Instead of almond flour you may add 1/2 a cup of all purpose flour.
      You also can skip of adding any type of other flour but the cake will be little bit heavier.
