Shake and Bake Falafel Chicken

Every Friday my mother used to cook a dish of fish, of chicken and of meat. I have already mentioned that my brothers and I were spoiled brats in terms of food. Each one likes something else, so my mother always made different dishes.
Even after my brothers left home, she still has the habit of cooking unreasonable amounts of food.
Today, I only admire her more, because I don’t have the strength to stand up all day long in the kitchen and prepare 20 different kinds of salads, and another 3 main dishes. As the years have gone by, my mother started to prepare the salads on Thursdays and on Fridays she would prepare only the main dishes. She tried to look for shortcuts. I guess as she gets older, she doesn’t have the same strength and energy. So she began to prepare the following recipe which is really a masterpiece: a minimum of work and maximum taste. So every Friday, she cooked fish, meat and falafel chicken.
Even when I told her that it was enough food, she would reply, “but it’s so easy”.
There is no impressive text here about the nutritional value of one of the ingredients and it is not a sophisticated dish, only a good one that reminds me of home and makes me homesick.

Serves: 6 Cooking Time: 1 hour

Ingredients

  • 8 pieces of drum stick chicken without skin
  • 1 Cup of falafel mixture ( buy it on Amazon Walmart online)
  • Oil spray
  • ½ cup of breadcrumbs

Instructions

In a plastic bag, put the falafel mixture, the breadcrumbs and shake to mix well.

Spray the chicken pieces with oil spray and put them into the bag and shake (yeh, you can dance meanwhile if you want)

Arrange the chicken in a baking pan, on top of it spread some of the mixture that is left in the bag. (The rest of the mixture can be put in the fridge for next time- trust me there will be next time).

Cover first with a baking sheet and on then with aluminum foil.

Bake in the oven for 1 hour and 45 minutes on 355 ℉.
