“Three’s a company”- The Skinnier Version

After a week at Detox, I decided to improvise a new dish . The Detox menu is rich, however it requires constant preparing. Because Dima and I started this process together, and we don’t always eat the same dishes, I found myself every day- all day in the kitchen.
As much as I love the kitchen and cooking, the heat in Arizona is unbearable; not to mention the heat that stove and oven add, while the AC screams “HELP!!”.
I wanted to make a dish that would last for at least three days.
We are not allowed to eat any carbs, we are allowed to a measured amount of vegetables, and about 2 chicken drum sticks for lunch.
I tried to imitate the fantastic recipe of “Three’s a company” in the skinnier version, and it turned out just wonderful!!"Three’s a company"- The Skinnier Version

Three's a Company: Broccoli, Carrots and Chicken

Serves: 5 Cooking Time: an hour and half

Ingredients

  • 6 pieces of drum- stick chicken
  • 1 red onion
  • 5-6 cups of broccoli
  • 1 teaspoon of sweet paprika
  • 2 teaspoons of turmeric
  • 1 teaspoon of salt
  • 1 tablesoon of olive oil
  • ½ cup of hot water
  • 3 cups of baby carrots

Instructions

Cut the onion in half and each half to thin slices.

Put 1 tablespoon of olive oil in a wide face pot. Add the onion and fry till it is wilted.

Move the onions aside and add the chicken.

Spread the salt, the paprika and the turmeric on top of the chicken.

Fry the chicken from both sides for 3-4 minutes.

Put the broccoli between the chicken.

Add the baby carrots and the hot water.

Let it boil for 10 minutes and then simmer for about an hour and half.
