Hummus Recipe- From Scratch!

I love chickpeas. This is my favorite legume – and if you’ve looked at my recipes, you’ve probably seen that I add chickpeas to everything.
Hummus is so simple to prepare, and the differences in the nutritional values between the homemade one to the industrial hummus are justify  home preparation.
Before I share the recipe with you, I will point out that you can cook a large amount of
chickpeas and freeze it in plastic boxes. So whenever you run out, you can defrost a box and you ready to go. I will also mention that in the past, I used to make hummus like my mother. She adds lemon and garlic. When we returned to Israel, I learned from my friend, how to make this hummus . And you know what? It is better.

Ingredients

1 ½ cups of cooked chickpeas\ washed canned chickpeas
2-3 tablespoons of tahini
salt to taste
About 1/4 cup of the chickpeas cooking liquid

Preparation

How to Cook Chickpeas?

If you decide to make your hummus from scratch you need to use cooked chickpeas (instead of canned). So how you do it?
1. Put the chickpeas in a large bowl and fill it with water for about 12 hours. The grains will absorb the water and swell, so the bowl should be quite large in relation to the amount of chickpeas
2. Pour out the water after 12 hours, wash the chickpeas, put it a pot and cover with water
3. Bring to a boil, and the chickpeas will begin to foam. Remove the foam to an outer plate with a spoon
4. close the lid and simmer
5. Cook for about two to three hours (until the chickpeas are soft), leave the lid closed and let the pot cool

Preparation of the Hummus

6. In a bowl, put the cooked chickpes, 2 – 3 tablespoons of tahini, a 1/4 of a cup of the chickpeas cooking liquid and salt to taste and grind using a food processor
7. And that’s it – you have hummus spread 🙂

Remarks

– It is better to cook in a pressure cooker. It simply shortens the cooking time
– You can cook a large amount of chickpeas. Freeze what’s left with the cooking liquid
– If you have cooked chickpeas in the refrigerator that you plan to make hummus from, heat it in the microwave before grind serve.

    Hello, hummus is my favorite, but never made it before. Do you have a recipe for tahini ?

      Hi! Definitely.
      Just look for Tahini in the search bar.
      Must say it’s a green tahini. If you want it to be less grean add less hrebs
