Hanukkah Sweet Latkes

You cannot miss the Christmas atmosphere here; Americans present the holidays so well and I do not really care whether it is caused by pure economic interest or not, it’s fun! And it’s hard not to get excited about this holiday. Christmas trees in every store, decorated and well lit, gifts and candy boxes, greeting cards, Santa Claus and Rudolph in every possible variation: from a small figurine to enormous swell mannequin.
But as a good Jewish girl, even though I am very excited about my first Christmas, it reminds me that Hanukkah is coming soon ,too (winter isn’t by the way).
The story of Hanukkah is a magical story:
Many years ago,the Greeks in the Holy Land, i.e. , Israel, wanted (like many others before and after them) the Jews to convert and become Greeks.
Against all odds, a small group of Jewish “the Maccabees” defeated one of the largest armies in the world at that time, expelled the Greeks from the Holy land and reoccupied the Temple in Jerusalem.
When the Maccabees wanted to light the Menorah in the Temple, they found only one jug of olive oil that was supposed to last only for one day, but miraculously, the jug lasted for eight whole days, until they managed to bring new olive oil to Jerusalem.
Hanukkah Sweet Latkes
In memory of these miracles, we light a Menorah every day for eight days. And eat things full of oil like donuts and sorts of Jewish latkes. At my parents house we would light candles, sing holiday songs briefly, and eat. Of course – Jews.
We would buy donuts on the the first candle lighting (on the first day you light one candle on the second day two and so on), and of course you cannot celebrate Hanukkah without Jewish latkes.
Hanukkah Sweet Latkes
The traditional Jewish pancakes called “latkes” and they are made of potatoes, the result is something like hash brown. My mother never made these because we all have the tendency to gain weight fastest than the wind.
She makes her own perfect “latkes”, which I can testify are so delicious that today, as an adult with independent pan and potatoes, prefer to make her latkes.
Hanukkah Sweet Latkes
Print Recipe
Serves: 4 Cooking Time: 20 minutes

Ingredients

  • 500 gr. of light sour cream
  • 4 eggs
  • 5 tablespoons of flour
  • A teaspoon vanilla extract
  • 4-6 tablespoons of sugar
  • 1 teaspoon of oil (coconut butter vegetable)
  • 1 tablespoon of sugar powder

Instructions

Put all the ingredients in a bowl and mix well.

On a small Teflon pan, heat 1 tablespoon of oil and pour the mixture in small amounts.

Fry on a Teflon pan for 2-3 minutes from both sides and let cool.

Spread some sugar powder On top.
