Bourekitas Recipe

My Noam is the pickiest kid in the world when it’s relate to food.  I’m not exaggerating. He really does not eat anything. And he is also inconsistent, one day he eats schnitzel and the next day he will refuse to touch it. It’s so frustrating. As a cooking mom it is kind of nightmare.
What he is always willing to eat is these bourekitas. Well, it’s a Mediterranean treat so L can’t blame him.
It’s true that it’s not the classic bourekitas, with the all purpose white flour and butter, but because Noam eats it quite often it’s important for me that the ingredients will be healthier.

Ingredients

To dough
4 cups spelt flour
Half a cup of olive oil
1.5 cups boiling water
Half a teaspoon of salt
For filling
14 oz. of grated cheese (Gouda\Cheddar\Mozzarella- what ever you like)
14 oz. grams of feta cheese
1 egg
For baking
1 egg
A handful of sesame seeds

Preparation

1. Prepare the dough: Put all the ingredients in a bowl and mix first with a spoon (because it is hot), and than knead the dough with your hands. Don’t knead a lot. just until the dough is unified
2. Prepare the filling: Put all the ingredients in a bowl and mix to combine
3. Preheat the oven to 400 F
4. Roll out the dough as thinly as possible on baking sheet-  we like it thin. This dough is also very elastic and comfortable to work so do not be afraid
5. Pinch using a cookie cutter or cup (I use Noam’s plastic cup from IKEA) a circle of the desired size
6. Put about a teaspoon of filling in the middle of the circle (depending on the size of the circle of course) and close the edges with your hands

7. Place the bourekitas on a baking sheet and brush with egg, sprinkle with sesame seeds

8. Place the pan in a preheated oven and lower the temperature to 350 F (remember that we heated the oven to 400F?) . Bake for about 25 minutes – until the bourekitas are browned and beautifulBourekitas Recipe
