Baked Chicken With Some Veggies Recipe

This is probably the most basic and popular recipe in Israel, but until recently I never made it.
My aunt makes every Friday for Shabbat dinner, and not just her. Every average home in Israel prepares it on a fairly regular basis.
My mom is not really a fan of it. She claims it is too basic. If you ask me, she does not like it because his companions are potatoes and sweet potatoes that simply constitute “empty carbs” in her opinion.
One lazy Friday, I wanted to make something I had not made so far for Dima. Something that does not require too much preparation. Without many pots and trays – one dish that is both protein and carbohydrate. Something that will take me literally two minutes to make. And of course something that won’t make me stand on my feet for too long (I’m a little hippo through this pregnancy).

Ingredients

12-15 chicken drum sticks (I remove the skin- but you don’t have to)
3-4 potatoes
2-3 sweet potatoes
2 onions
2 tomatoes
1 carrot
2 tablespoons sweet paprika
2 garlic cloves crushed
Salt and pepper to taste (I put a tablespoon of each)
A quarter cup of olive oil
Half a teaspoon of dry hot red chili (optional)

Preparation

1. Peel the potatoes, sweet potatoes and onions and cut all the vegetables into coarse cubes and place in a bowl.
2. Add the chicken, spices and olive oil and mix all together – do not be gentle, use your hands!
3. Transfer all the contents to a baking tray and cover it with foil.
4. Bake for 60 minutes 180Cº\ 350 Fº. After an hour, remove the aluminum foil and bake for another 30 minutes.
