Lasagna For The Lazy Ones

Yes, you have read it correctly lazy lasagna- or if you prefer lasagna for the lazy.
This recipe is for people who do not have the patience to make layers of perfectly straight noodles. And no, I do not like pasta sheets, I’m not sure why.
It can be served as lunch or dinner (hell, I can eat it as breakfast too), and the great advantage is that it is made from ingredients that are always available at home and it can be baked in a microwave!

Serves: 6 Cooking Time: 60 minutes

Ingredients

  • A pack of Pasta (450 gr.) In the form of "old fashion wide", which is similar to pappardelle only shorter.
  • 500 gr. Of cottage cheese
  • 170 gr. Of tomato paste
  • 1 1/2 cups of grated mozzarella (you may use also cheddar or Swiss cheese)
  • 3 eggs
  • 1/2 teaspoon of dry oregano
  • Salt to taste

Instructions

Cook the pasta according to manufacturer's instructions and strain it.

Transfer to a bowl and add all the other ingredients except half a cup of the grated cheese and mix.

Transfer to a greased baking pan and spread the half cup of the remaining cheese on top.

Place in a microwave for 30 minutes or alternatively, bake for 30 minutes in a preheated oven on 355 °.
