Broccoli Casserole

I LOVE broccoli. I remember that as a child I was so proud that I was eating broccoli. Because usually children don’t like broccoli but I did.
I love it fresh in salads, stir-fried in a pan, baked in the oven and cooked in a pot. It’s just a vegetable that you cannot go wrong  with.
This recipe is great. It is tasty and easy to make. It is suitable for lunch or dinner (hell, I can totally eat it also for breakfast). Broccoli also contains antioxidants. It also contains calcium, vitamin C, vitamin K, vitamin B6, folic acid, potassium, and fibers. Is it completely super-food: it has more vitamin C than there is in oranges and the calcium it contains, is absorbed better in our body than dairy products. So it’s also healthy- which is always awesome.

Ingredients

  • 400 gr. of frozen broccoli
  • 30 gr. of melted butter
  • 1 cup of cottage cheese (225 gr.)
  • 100 gr. of grated yellow cheese
  • 1 cup sour cream (170 ml)
  • 4 eggs
  • 3 tablespoons of flour
  • ¼ teaspoon of grated nutmeg
  • 1 ½ teaspoon of baking powder
  • Oil for greasing the baking pan
  • Salt and pepper to taste

Instructions

1. Heat the oven to medium heat (355F)
2. In a bowl, mix the butter, cheese, eggs, sour cream, flour, spices and mix well
3. Add the defrost broccoli and mix
4. Pour the mixture into a loaf pan and bake for about 50-60 minutes until it gets brownish
Notes
You can also bake it in muffin baking pan and bake for about 35 minutes
